nothing wrong with eating fish I like fish and not just sea fish,  conger meat is very white and firm and I like it in a fish pie cut into cubes with cheese and milk and butter and a little bit of parsley and mashed potatoes on top an done in the oven till the top gets a good brown crust on brilliant .

That fish pie one sounds great, I'll give it a go.
I'm not the best cook but I'm trying to learn, some things come out better than others.
I bought that Rick Stein book whicih is pretty good, some of the recipes are a bit fancy for me.
I much prefer this book, millions of great seafood (and meat, poultry) recipies and they've all turned out great so far

here is another one for you to try  dogfish  skin and cut the wick/cartilage out then chop it into 1-2 inch chunks put it in a deep bowl with some finely chopped garlic and a couple of tablespoons of dark soy sauce stir it around then put in the fridge for an hour or so then give it a good stir and sir fry it on a very high heat for a few minutes ,it looks like crap but it tastes brill the only snag is after you will wish that you had cooked more as every one eats it great at parties and barbies

I remember taking my first one home and thinking it was dead, left it on the chest freezer lid in the kitchen - when my Mum went in the kitchen in the dark and switched the light on the conger was on the floor slithering towards here. Can still hear the screams today

Tasted very nice though when finally killed - cut into steaks and oven baked in foil.
 
I took a small one off Gethyn's boat last year and we had the steaks grilled with bit of butter and herbs - was great. I have heard that they are good for currys too.
 
I find killing the odd few fish and eating them easier to justify than a sporting catch and release argument ( but everything undersize goes back - in fact most stuff I catch goes back as its mainly doggies and pin whiting [sa]) - however having caught a smoothie for the first time last year I think i would struggle to kill anything so magnificent as one of them unless I was literally starving

Conger..........mmmmmmmmmmm.(15)(15)  They are very good eating, but a bugger to kill and skin[sa].  I would not bother with anything less than 10lbs, too much work for what you get.  For me cooking wise, nothing fancy just shallow fry steaks in garlic butter, magic{thu}  as the steaks shrink in the heat there are little bones that protrude, take these out as they can give you a good choking[sa].  The best part is the side of the belly, in bigger fish.  in the 25lber i ate, it was around 50cm long by 20cm by 30cm. All meat, no bones or fat like beef. I cut these into thin strips like you would pork.  {thu}  This was then stir fried with some chinese type sauce(i don't know exactly as i don't do the cooking)[M]. It was fantastic to eat(cl)(cl)
