Possibly I will get groaned at for this question but is it the done thing to keep conger and if so how big should they be and does anyone know any congerish type sauces? I saw some in the shop the other day, I only ever caught 1 small one (about5lbs so put him back) It looked like there was quite a lot of meat on it in the shop, was cut into cross sections.

personally i dont know the actual size limits for conger, but as for cooking them, cross fillets are the best way, about an inch deep, rub salt and vineagar onto both sides and grill on a light heat slowly, a nice parsley sauce and a bit of mash go down nice for me. {thu}

Minimum landing size for conger caught in the north west and wales sea fisheries area is 580mm (58cm). http://www.nwnwsfc.org/page/home.htm

I made a fish pie using conger once and it was delicious. Cut steaks into chunks and fried in a little olive oil with garlic, parsley, basil and a splash of soy sauce. Mix in some fried mushrooms and onions, pour over a very mild cheese sauce and top with mashed potato! I also mix a litle grated cheese, butter and milk into my mash to make it creamier and tastier and of course a sprinkle of grated cheese on top for that crispy top!

If any narrowminded poster groans just because you take a fish home for the pan, ignore them.
 
Isn't fishing for food a little more understandable than fishing for sport?

Not too sure on conger recipes, but when Chiefbeef comes along - he can fill you in. There is nothing in the sea safe from his stomach, and I kow he likes his conger.[ok]

                1 pound conger eel, cut in medallions
                salt and freshly ground pepper to taste
                1/2 cup dry white wine
                juice of 1 lemon
                1/4 cup cornstarch
                2 tablespoons olive oil


I have tried conger a few times ... very tasty .give it a go

i heard  the limit is 77 cm for conger and huss (may be wrong) http://www.wfsa.org.uk/shore%20sizes.htm
 
its ment tobe loverly eating i wouldnt mind trying it myself i hear congers are a begger to kill tho

Hi Thomas.....the site you're looking at is an anglers website and not the sea fisheries committee website. For each region of coast there is a seperate sea fisheries committee. For most of us using this site (I guess) we're goverened by the North Western and North Wales Sea Fisheries Committee. Legally we have to abide by their size limits. I'm not sure where the WFSA get their figures from but it could be that those are the size limits for south wales or an average for the whole of the UK. The size limits vary depending on where you are in the UK as the size at maturity for many species also varies depending on location. To stick to the law check out the local sea fisheries committee web sites (http://www.nwnwsfc.org/) or contact your local sea fisheries officer.

No worries. It's amazing how many sea anglers don't know much/anything about sea fisheries committees actually! The committees could probably do with a publicity campaign posting fliers in tackle stores etc. I think most people just get their info from angling websites or more often than not via word of mouth.

A Long Time Ago Gaz's Shop Was A Grocery And The Owners/propreitors Lived Across The Road.i Think The Wife Is Still Going And Still Lives There.she Was The Mother Of My Best Mate Who Died In 1976 At 17yrs Old.but Anyway The Conger In Question Was A 44 + Pounder!!!!it Lived In The Boot Of The Dads Car For A Week No-one Could Go Near It!!!!!everytime The Boot Was Opened It Went Ballistic Hissed And Thrashed Like Mad!!!!!so The Boot Was Shut Again!!!!!!!one Of My Fishing Mentors Finally Plucked Enough Guts To Deal With It.the Boot Of His Car Was As If Millions Of Snails/slugs Had Invaded!!and Stank For Months After.the Conger Was Finally Put On The Plate A 4inch Steak Approx 8 To 9inch In Diameter After Gutting.there Wasnt Much Room For The Chips And Peas!!!!fantastic Taste Though. Memories Eh!!!

steaks a couple of inches thick skined poached in milk.cornish reciepe again poached in fish stock and served with the stock and garished with nasturshem flowers (convulverious)

Have a good look at thw WFSA sizes Pete, these should be encouraged as a guidline before the SFC. Most fish swimming in our waters are covered and those listed on the SFC list, are usually afforded a much larger retention size by the Governing Bodies.

Haven't read many posts knocking people for eating fish so far, but its only early.
